ZERO-WASTE OFFSHOOT LAUNCHES AT FROG BY ADAM HANDLING

Adam Handling was forced to shut his Chelsea-based zero-waste venture Ugly Butterfly (as well as his Hoxton restaurant) as a result of the pandemic but he’s now launched something similar outside his Covent Garden flagship. Toad on the Road is a 36-cover outdoor space in front of Frog by Adam Handling and it serves dishes made from waste ingredients from the restaurant.

The menu includes lobster rolls made using offcuts, fish finger sandwiches made from turbot trim, Nanny Sophie’s fried chicken using leftover thigh meat, failed pommes souffles with caviar, and frozen ice cream sandwiches made with foraged ingredients like meadowsweet. Eve Bar next door will be providing the drinks, which include a coffee negroni made from leftover grounds and a range of frozen cocktails.
