WOOD & WATER TO OPEN IN BRIXTON

It’s all change for April Jackson as she’s making over her Brixton bar Three Little Birds and turning it into Wood & Water this November. Taking its name from ‘xaymaca’, the origin of the word Jamaica meaning ‘land of wood and water’, the new bar and restaurant will combine modern British food with Jamaican soul, with dishes inspired by April’s travels and her time living in France and NYC. That means plates like pan-seared duck breast with jerk glaze, roasted sweet potato puree, wilted greens, rum-soaked plums & hazelnuts; potato croquette with goat curry & plantain ketchup; and roasted cauliflower with beetroot hummus, pomegranate & tamarind sauce.

Operations Manager and April’s partner Lee Tan has created the new cocktail menu with serves that make use of spirits from across the tropics, like the St. Elizabeth Martini (with Porters Tropical Old Tom Gin, pineapple liqueur & herb oil) and the Pimento Old Fashioned (with Plantation 5yr Barbados Rum, pimento & chocolate). If you can’t jet off for an actual island getaway this winter, a trip to Wood & Water is gonna be the next best thing.
