WINE BAR AND POP UP SPACE LA CAVE TO OPEN IN HOLBORN

The natural wine bar La Cave is set to open below Rondo in Holborn this September. The wine bar’s rotating roster of chefs and pop-ups means that no two visits will be the same. Calling themselves an “incubator space” the restaurant hopes to give budding young chefs a place to test out new ideas and concepts before going out and braving the big bad world of hospitality and restaurant ownership. First up to tame the stove is Cantina Valentina, a Peruvian inspired pop-up that will dishing up at La Cave for the next two months.

Menu standouts include cheese wonton with a green chilli paste, grilled duck magret with chirimoya membrio, lima bean humous served with fried plantain, ceviche with classic seabass and Scallop with maiz morado, pink peppercorn and coconut, crab bisque with fried soft shell and oca roots, whole grilled sea bream Nikkei style and braised oxtail, Jerusalem artichoke and corn tamale, avocado, cilantro and quinoa ‘risotto.

With La Cave being a wine bar, we should probably talk about their wine offerings too. The basement bar will boast London’s largest selection of bubbles including wines and ciders like Tempranillo Joven – a red from Rioja, a hazy white fruity Ciello Blanco IGP from Sicily, Angol d’Amig-Scaramúsc from Veneto, a juicy, acidic and tannic Pet Nat Perry Pear Cider, and an electric Grüner Veltliner Smetana with a citrusy burst and soft spritz from Slobodne.
