The hotel, in the village of Llandrillo, has had a refurb and got a new chef
Once the private shooting lodge of the Duke of Westminster, Tyddyn Llan is now a 12-room boutique hotel that’s recently been totally refurbished by its new owners. As well as transforming the property, they’ve recruited a new chef to lead the kitchen. Gareth Stevenson, who trained under Michael Caines, is doing a la carte, six-course and ten-course tasting menus, featuring dishes like cured sea bream with fennel and blood orange, roasted Welsh Black beef fillet with beetroot and black garlic, and duck egg custard tart with rhubarb and ginger creme fraiche ice cream.
The food is reason enough to visit Tyddyn Llan but there’s plenty to do in the surrounding area too, including walks in the Berwyn Mountains (you must see the stone circle), train rides on the Bala Lake Narrow Gauge Railway, canal boat trips over Thomas Telford’s famous Pontcysylite Aqueduct at Froncysylite, and trips to the tea houses of Ruthin.
