Despite Albion and the Rooftop Bar & Grill always doing well, the basement space at Boundary in Shoreditch has been a tricky one to get right – the last restaurant Tratra only lasted two years. Now Sir Terence Conran has brought in Richard McLellan (formerly of Typing Room and Alyn Williams at the Westbury) to have a go with Wilder.

Due to open in October, the restaurant and bar will celebrate British ingredients, focusing on seasonality and sustainability, with produce like trout, crayfish and watercress coming from Sir Terence’s Barton Court estate in Berkshire. You can expect dishes like bread cracker with carrot emulsion and carrot oil; venison with beets, elderberries and rye; plaice with cockles, black cabbage and gutweed; and meadowsweet with white chocolate and fig leaf oil. As well as an old-world wine list, there’ll be a special gin menu and cocktails curated by Alan Sherwood of Little Mercies, following the same seasonal approach as the food.
