Tom Sellers, the two Michelin-starred chef from Restaurant Story, is teaming up with PATRÓN to bring Mexican cantina culture to London for International Margarita Day. We catch up with him to find out how he goes about the food and cocktail pairing process and what his fave Margarita is.

How have your travels throughout Mexico City and Jalisco inspired the PATRÓN International Margarita Day menu? 

When I visited Mexico in October 2022 I tried lots of street food with amazing flavours and I fell in love with the social, buzzing cantina culture – so I knew I wanted to recreate some of these with my own twist, and to bring a slice of Mexico to London. Tequila and Mexican food is one of the most iconic food pairings for a reason, so the menu of handcrafted botanas I’ve created has been specially designed to perfectly complement the mighty Margarita, made with PATRÓN.

What was the process behind Perfectly pairing the ‘Botanas’ with the PATRÓN Margaritas for ‘La Cantina de Margarita’? 

We wanted to keep flavour and passion at the heart of the project. It was important to us to make sure this was evident in every detail to ensure the campaign felt 100% authentic and meaningful to cocktail aficionados and foodies London-wide. By giving visitors of La Cantina de Margarita an opportunity to experience a genuine taste of Mexico’s famous ‘Cantina’  bar culture – whilst they enjoy their perfectly paired PATRÓN Margarita – felt like the perfect way to celebrate International Margarita Day.  

The menu itself really brings this Mexican influence to life, from Fresh Corn Taco with Lobster & Patrón Silver gel through to Sweet Potato & Orange Camotes (a traditional Mexican sweet with bitter orange notes) each botana has been handcrafted, and selected ingredients to ensure we elevate the complementary flavours of the Margarita serves. 

How did you first come to start working with PATRÓN Tequila? 

There is a natural synergy between the work we do at Restaurant Story and the values of the PATRÓN familia. Their team can be considered as absolute masters of their craft, creating perfection in every drop that’s produced. The same mastery and passion is central to everything we create at Restaurant Story too – this shared ethos has allowed us to create a truly one-off menu in La Cantina de Margarita. It’s a true celebration of Mexican culture in honour of International Margarita Day, and not to mention… delicious. 

What is about PATRÓN Tequila that attracted you to forming a partnership?

I was mainly attracted to PATRÓN Tequila’s dedication to setting the standard for excellence. They are the undisputed leaders of the super-premium tequila category, which is something we continually strive to achieve in the restaurant sector too. I have always been a fan of the brand as it’s my favourite tequila, so it’s a pleasure to collaborate. 

What’s your favourite PATRÓN Margarita, and where is your favourite place to drink it? 

My personal favourite is PATRÓN Tommy’s Margarita served at home, as it’s the easiest way to create a twist on a classic PATRÓN Margarita. The perfect cocktail to sip upon whilst catching up with friends at a bar or at home relaxing with my dog, Boss. It’s simplicity in its best form – all you need is 60ml of PATRÓN Silver, 30ml of fresh lime juice, 15ml of agave nectar (to taste), a sea salt rim and lime wedge for garnish.
