Ukrainian-Inspired Restaurant SINO Is Opening in Notting Hill

Founder Polina Sychova and chef Eugene Korolev are behind the new venture

Ukrainian restaurant Tatar Bunar is about to open in Shoreditch and not long afterwards, another Ukrainian spot will be opening on the other side of town as SINO comes to Notting Hill. Pronounced “see-no” and taking its name from the Ukrainian word for hay, SINO will serve a menu that blends regional Ukrainian flavours and ingredients with British produce and modern cooking techniques. There’ll be hay motifs (a common decoration at cultural festivals) throughout the 52-cover space, alongside other natural textiles like Ukrainian clay.

Eugene, president of Bocuse D’Or Ukraine, left his Dnipro restaurant to fight on the front line of the war in 2022. He’ll be back leading a kitchen at SINO, alongside a largely Ukrainian brigade brought over from his former establishment. His menu will include dishes like:

  • hay-infused wild mushroom broth
  • aubergine marinated with dill flowers, fennel and garlic served with Kyyrma bread
  • beef tartar with ceps sabayon, Jerusalem artichoke crisps and lovage oil
  • pork belly with blackened beetroot, smoked dry pear and pickled walnut
  • cherry glazed BBQ catfish, fried parsley root, samphire, kovbasa (a traditional Ukrainian sausage), dried grated mussels and bell pepper sauce
  • vareniky (dumplings) with oxtail, spicy beef broth, and housemade mushroom garum
  • aged walnut ice-cream with smoked plum chocolate mousse 

Ukrainian mixologist Ana Reznik (ex-A Bar with Shapes for a Name) will also be drawing inspo from classic Ukrainian dishes for the cocktails, using lab-led techniques to give them a modern twist. Expect serves like the Buckwheat Milk Punch, a clear cocktail with buckwheat, cardamom, vanilla and aged rum; and the Apple Bun, made with vodka, butter and dulce de leche distillates, apple juice and vanilla cream soda. Wines from across France, Spain, Italy, Georgia and Ukraine will complete the drinks list.

Speaking about the opening, Polina said: “At SINO, our mission is to celebrate Ukrainian culture and gastronomy, and to help to raise its  profile in the west. Ukraine has a rich culinary history, yet its food is sorely underrepresented in the UK. At SINO, we’re combining traditional Ukrainian ingredients and dishes with western techniques, to create something elevated that we hope will feel authentic, innovative and familiar at the same time. We’re really excited to be opening in Notting Hill, and to bring SINO to life in London.”
