The Brat team is branching out into Central London with a new wood grill restaurant
Tomos Parry has been successfully marrying up the food of Spain and Wales for five years with Brat, at both the main restaurant in Shoreditch and the site at Climpson’s Arch in London Fields. And he’s continuing that idea with his new spot Mountain, opening on the former Byron site on Beak Street this July.
Though the ethos will be similar, mixing his Welsh heritage and fave Spanish influences; produce will come from trusted suppliers in Wales and Cornwall; Head of Wine Martina Larnach and Holly Willcocks will be doing the wine list; and there’ll be cooking over a wood grill, the Soho restaurant won’t be a carbon copy of Brat, so don’t go expecting those famous whole turbots. Instead, the Mountain menu includes:
- Mallorcan sobrasada
- whole pink bream
- wood-grilled lamb chops
- Anglesey lobster caldereta, a Menocarn speciality
- wood-fired rice
- smoked potatoes
- ensaimadas
- almond tart
The restaurant will also feature a large open kitchen and counter bar, with a second bar downstairs where you’ll be able to get cocktails and vermouth on tap, as well as watch the chefs doing puds in another wood-fired oven.
