Ex-Kitty Fisher’s head chef Tomos Parry is opening his own place called Brat, which is apparently slang for turbot, in Shoreditch this March. The menu will be a mixture of Welsh and Basque influences, with lots of cooking over wood fires, which will be at the heart of the restaurant. You should expect to see dishes like sea trout with jersey cream and river herbs, offal hotpot with laverbread and potatoes, slow grilled red mullet, grilled Welsh mutton and turbot (obvs). And with the guys behind Noble Rot collaborating on the wine list, the drinks should be pretty spesh here too.
