Franklins is becoming The Victory, thanks to hospo operator Jamie Younger
After finding success with The Begging Bowl and The Palmerston, Jamie Younger is back in East Dulwich to open The Victory. The pub, which had most recently been operating as Franklins, is getting a full refurb, including a zinc bar top, porcelain lights, a bespoke back bar, antique mirrors, and polished wooden floors, ahead of reopening under its original name. Jamie is also recruiting Executive Chef Seán Breen (ex-Noble Rot and Hero of Maida Vale) to lead the kitchen.
The Victory’s menu will showcase British cooking with a dash of French bistro thrown in, with dishes like:
- oysters mignontette
- Bayonne ham with celeriac remoulade
- salsify fritters with aged Comté and truffle
- steak tartare with dripping toast
- Cornish crab vinaigrette with fresh herbs
- poached sea trout with trout roe and dill beurre blanc
- sauté veal sweetbreads Grenobloise
- butterflied red mullet with asparagus and bottarga
- roast poulet jaune with seasonal sides and garnishes
- sharing Galloway beef steaks
- fig leaf custard with Gariguettes, black pepper and Beaujolais
- chocolate & hazelnut choux bun
- baba au rhum
The wide-ranging wine list will feature plenty of regional French classics as well as bottles from low-intervention, organic and biodynamic producers. And for those who fancy something a little stronger, The Victory will also offer a dedicated martini menu, with classic serves and house variations like The Victory,Vesper and Nelson’s Blood.
