Third Time Lucky for The Conduit? Fingers Crossed…

Chef Will Devlin is making his London debut.

The Acre founder is bringing his sustainability-led cooking to Covent Garden with Birchwood – The Conduit, opening in June.

Landing inside The Conduit on Langley Street, the project is a three-way link-up between Devlin, hospitality group Levy, and the members’ club itself. It’s also the third food concept to take on the space, so let’s hope it’s third time lucky. The shared focus is on ethical farming, seasonality and low-impact dining, with Devlin’s Kent-based Acre group supplying much of the produce.

Birchwood – The Conduit will run as a café and wine bar from day one, with a rooftop restaurant set to follow later this autumn. During the day, the menu leans into high-quality grab-and-go, with things like sausage and egg muffins made using meat from Acre’s own butchery, pastries, and stacked sandwiches. Expect fillings along the lines of beef topside pastrami on rye and cured Kent ham with Ashmore cheddar, alongside salads and fresh juices.

Come evening, the space shifts gears into a more relaxed wine bar setup. That means small plates, British cheeses and house charcuterie, plus dishes like mushroom croquettes with black garlic and braised lentils with smoked beetroot and feta. Puddings keep things regional too, with Kentish gypsy tart and gooseberries on the cards.

If you know Devlin’s work at The Small Holding, which has held a Michelin Green Star for five years, you’ll have a sense of what to expect. There’s a strong focus on provenance and farming, but the food doesn’t feel preachy. It’s about making better sourcing feel like an easy choice rather than a compromise.

Birchwood – The Conduit looks set to bring a slice of the Kent countryside into the middle of the West End.
