The Team Behind Master Wei Has Opened Dream Xi’an

Guirong Wei has chosen Tower Hill for her third restaurant

Through Xi’an Impression in Holloway and Master Wei in Bloomsbury, Guirong Wei has been one of the leading proponents of Shaanxi food, and now she’s bringing us even more regional specialities with her latest restaurant Dream Xi’an. Hand-pulled noodles are the northwest Chinese province’s most famous food – both noodle and bread making in the area dates back centuries – and Guirong serves them at all her restaurants.

At Dream Xi’an you can get ‘cold skin’ liangpi noodles, which are steamed and hand cut, and served with the likes of chicken and sesame sauce; Qishan hand-pulled noodles in a spicy-sour soup with braised pork and veggies; and the signature thick and chewy biangbiang noodles (named after the sound the noodles make as they hit the worktop), served with beef, pork or veggies.

The Tower Hill kitchen is Guirong’s biggest, so she’s able to offer a bigger menu at Dream Xi’an, which includes dishes like:

  • Xi’an Empress Dumplings with chicken, prawn and carrot
  • Xi’an Special Dumplings with pork, cabbage and spring onion
  • Vegetarian Special with wood ear mushrooms, glass noodles and egg
  • Wei’s Xiaolong Bao with pork, preserved veggies and soup
  • Special fried bao with beef and onion
  • Paomo soup, bread cooked with sliced beef in a rich beef broth

As well as the handmade dim sum and Xi’an street food specialities, the new spot also serves classic dishes from Master Wei, such as smacked cucumbers in sesame and chilli oil, cold beef tendon in spicy sauce, and cumin beef & pulled pork ‘burgers’ in leavened flatbreads.
