THE TEAM BEHIND SOM SAA IS OPENING A NEW RESTAURANT

Mark Dobbie and Andy Oliver will launch a new Thai spot, Kolae, at Borough Market this October

Now a well-established Spitalfields favourite, som saa started out as a popular pop-up by two chefs (Mark Dobbie and Andy Oliver) who met while working at David Thompson’s Nahm. Seven years after the duo landed their permanent E1 site, they’ve announced that they’re working on a new restaurant set to open in the autumn.

Kolae will be based out of foodie hub Borough Market and the focus will be on grilled dishes and kolae (also known as Golae, Galae and Gaw Lae), a cooking technique found in the south of Thailand where ingredients are soaked in a curry-like coconut marinade before hitting the grill. Highlights from the menu include:

  • fried prawn heads with turmeric & garlic
  • kolae mussel skewer with calamansi lime
  • kolae chicken bamboo skewer
  • horse mango salad with dried shrimp & roasted coconut
  • mu hong middlewhite pork belly & ribs
  • southern gati curry of seasonal whole fish
  • pandan sticky rice, young coconut sorbet & jackfruit

There’ll also be coconut water pickles, herb fritters, nam phrik relishes and rice available on the side.

As for drinks, expect a concise menu of imaginative cocktails made using Thai ingredients – hello pickled green mango dirty martini – around 15-20 wines and a handful of beers and ciders. And the 75-cover restaurant, which is split across three floors, will include an al fresco courtyard and a private dining room at the top of the building. Given the accolades that Dobbie and Oliver have racked up with som saa, this one’s got us excited.
