The Provisions Team Is Launching a New In-Store Pintxo Bar

Every Thursday to Saturday, the wine and cheese shop will transform into a San Sebastian-inspired restaurant and bar

Provisions, one of our favourite cheese shops in town, has announced that they’ll be adding a Basque restaurant onto the original site on Holloway Road this September. While it’ll still be your go-to for a bottle of wine and/or hunk of cheese during the day, on Thursday, Friday and Saturday evenings Provisions will become Topa, with a menu of pintxos and Basque plates.

The kitchen will be headed up by ex-Leroy head chef Simon Shand and the dishes on offer will be inspired by his trips to San Sebastian. Expect the likes of:

  • Wild mushrooms and raw egg yolk
  • Crushed coco de Paimpol beans with tomatoes and garlic
  • Hake with orzo, saffron, and courgettes
  • Slow-cooked crab, leek, and cognac Txangurro tarts
  • Chorizo cooked in cider
  • Ibaiama ham with piquillos spread
  • Fig, almond and brown butter sponge with creme fraiche

Topa will have room for 22 covers, with a bit more space on the new al fresco terrace, and you’ll be able to book a table in advance. About the new opening, Simon said, “The food is going to be reflective of the region, it will be fun, focused on high quality, seasonal ingredients. We want to bring the spirit of a San Sebastian pintxos bar to Islington.”
