The Pachamama Team Is Opening Another Greek Restaurant

It’s gonna be the sequel to Zephyr

The Pachamama Group made its name with Peruvian restaurants but it’s been moving into the world of the Mediterranean – first came Zephyr in Notting Hill in 2022 and now follow-up spot Bottarga is headed for Chelsea (and there’s still Effie at The Whiteley to come). Like its predecessor, Bottarga will be doing Greek food, taking particular inspo from the Aegean islands, but will be “younger and more casual”.

Adam Rawson, who led the original Pachamama opening, is teaming up with Executive Chef Tzoulio Loulai for the menu, which’ll feature many Greek ingredients, like olive oil produced by Loulai’s father, Amfissa olives, Epiros feta, pita from Aspropirgos and olive oil rusks from Karavas Bakery in Kythira.

You can expect dishes like:

  • Whole grilled day-boat fish finished with chilli butter
  • Txuleta ex-dairy ribeye served with a bone marrow stifado jus
  • Cep mushroom pastichio with thyme Graviera cheese and black truffle
  • Whole burnt butter potatoes with roasted garlic aioli
  • Bottarga orzo
  • Burnt Original Beans Piura Porcelana Chocolate cheesecake with salted caramel chocolate sauce

Mediterranean winemaking will also be well represented on the Bottarga drinks list and Greek DJ Georgios Kalamotousakis is curating the soundtrack – there’ll even be a terrace for al fresco action should we also get a burst of Greek sunshine.
