The Mr Bao Team Is Opening a Wonton Noodle Soup Bar

It’s the group’s first foray outside of Taiwanese cuisine

With Mr Bao, Daddy Bao, Good Measure, and Master Bao to their name, hospo group 6 of 1 has Taiwanese food down, so for their next move, the team is taking on a Hong Kong classic – wonton noodle soup. At new 18-seater walk-in spot Wonton Charlie’s, opening in London Fields in November, the Cantonese comfort food dish will be front and centre. Egg noodles will be made fresh every day, flavourful chicken and fish broths will be made in-house, and wontons will be hand-wrapped using homemade skins.

The wontons will come in three varieties – pork-filled fish skin (a HK specialty where fish is used in the wrapper dough), prawn, and classic pork. You’ll be able to have them with noodles in chicken or fish broth, or lo mein-style, with noodles tossed in a soy, ginger and garlic dressing, with fish balls available as an optional add-on. You can pair your bowls with crispy fish skins, fresh sour plum tea, free hot tea and local beers.

Speaking about Wonton Charlie’s, Frank Yeung and Abhinav Malde, co-founders of 6 of 1, said: “In Hong Kong we found the intimate, functional and honed in focus at these noodle bars so inspiring and wanted to bring that energy to our site in East London. It felt important to give the dish the same level of respect it’s given across the city, so we have worked hard to make sure every element can be made in house, to achieve that same obsessive level of attention and delicious outcome!” 

With the Fine Cider Company already open in the Mentmore Terrace arches and another outpost of BúnBúnBún on the way, London Fields is clearly the place to be.
