THE FALLOW TEAM IS OPENING A POP-UP CHICKEN SHOP

It’s about as far away from your local bossman as you can get

It’s official: chicken has gone bougie. First it was The Standard dolloping caviar on Morley’s fried chicken, then it was rotisserie chicken making a comeback, and now Fallow is opening a pop-up chicken shop in St James’s Market. FOWL, which’ll be round the corner from the restaurant taking over a pub previously run the by the Cubitt House Group, is being billed as a ‘chicken shop like no other’, and we’re inclined to agree.

Firstly it’ll have cocktails, wines and Guinness on tap, and secondly, Fallow chefs Will Murray and Jack Croft have created a ‘beak-to-feet’ menu using pasture-raised, soy-free birds from The Ethical Butcher and Rare Breed Meat, including dishes like:

  • cornbread, chicken and herb butter
  • chicken liver parfait with black cherries and sourdough soldiers
  • triple crisp hot wings with sriracha mayo
  • chicken caesar salad with pickled lemon and anchovy
  • triple crisp chicken fillet bun with cheese sauce
  • chicken fries
  • chicken fat crème craramel

Will and Jack will also be bringing some of their foodie friends in to cook-up one-off dishes for the FOWL menu. It’s kicking off with the legendary Pierre Koffmann, who’s made a chicken leg corn dog with Aleppo pepper and La Grande Coque Pie with confit chicken hearts, livers and cockscombs, and in November, Table Manners star Lennie Ware will be adding her own creation to the menu.
