Michelin-star chef Tom Kemble's pizzeria is opening in Borough this spring After exploring his passion for pizza during the pandemic, and selling them in lockdown with his wife Tessa, Tom Kemble (ex-The Pass at South Lodge, Bonhams and Hedone), is now opening his very own pizzeria in Borough. Located in one of the arches next to Omeara and Four Quarters, Spring Street Pizza, with its modern retro interior and outdoor seating, will be serving 18-inch pizzas by the quarter, half or whole, for both dining in and taking away. Made with Italian-style biga dough (fermented for 48 - 72 hours to create a crispy but airy crust) and high quality toppings, the NY-inspired pizzas on offer will include: Classic Marinara - San Marzano tomato, garlic, wild oregano, confit garlic oil and basil Sausage & Friarielli - pork & fennel sausage, friarielli, red onion, wild oregano, fior di latte mozzarella, scarmoza, Parmigiano Reggiano and chilli flakes New Yorker - San Marzano tomato, Rebel Charcuterie pepperoni, Parmigiano Reggiano, hot honey and basil Anchovy, Straciatella & Rocket - San Marzano tomato, garlic, wild oregano, Parmigiano Reggiano, anchovies, stracciatella, lemon and rocket N’duja & Burrata - San Marzano tomato, fior di latte mozzarella, Parmigiano Reggiano, burrata and guindilla peppers You can savour those crusts and dip them in housemade green goddess, pesto rosso and confit garlic aioli. Aside from pizza, the Spring Street menu will include gildas, Italian charcuterie, Caesar salads, sort serve gelato with sea salt caramel and extra virgin olive oil, Italian wines and cocktails curated by mixologist Ana Reznik.
