After a series of sell-out supper clubs, Genevieve Sparrow is taking Pasero from pop-up to permanent by opening a restaurant and wine bar in Tottenham. Pasero, named after the Esperanto word for Genevieve’s surname, will run all week long as a cafe and deli by day before flipping into a restaurant in the evenings from Wednesday – Saturday.
Pip MacDonald (ex-J. Sheekey, Scott’s, Cafe Murano and Levan) will be heading up the kitchen, with speciality coffee, pastries, seasonal salads and sandwiches available during the day, alongside charcuterie, homemade pickles and fresh bread from Today Bread in Walthamstow in the deli. Come dinner, she’ll be cooking up a broadly European, regularly changing menu, featuring dishes like:
- cauliflower & tahini croquette with Hungarian black chilli
- sprout tops, nameko & king oyster mushroom, and ajo blanco
- ossobuco of monkfish & haricot beans with green sauce
- blackberry sorbet, fig leaf oil, almond brittle and chocolate mint
- peanut butter & chocolate coupe
There’ll be a short wine list centred around low-intervention bottles from European winemakers to go with the food, along with wines on tap from Uncharted, which you’ll also be able to take home as refills from the shop. All that plus warm interiors featuring second-hand and vintage furniture will make Pasero a real neighbourhood hangout.
