Luke Findlay is known for serving ‘traditionally inauthentic’ ramen at his Dalston spot Supa Ya Ramen and he’s taking that philosophy to the next level with a kitchen takeover of Finsbury Park pub The Plimsoll. For one weekend only, he’ll be serving an izakaya-inspired menu that also pays homage to The Plimsoll’s famous cheeseburger. His soupless ramen dish Cheeseburger Mazesoba will include a smash burger patty, bread & butter pickles, aged beef fat & soy dressing, burger sauce, American cheese and soba noodles, alongside a veggie version with pickled shiitake mushrooms, roast cabbage, kewpie mayo, kimcheese slaw, fried garlic, green onions, roast garlic & soy dressing and egg yolk. There’ll also be smashed cucumbers, tofu whip with grilled asparagus & salted black bean toum, and fried chicken with apricot & pickled green chillies on the menu, so you’ll defo want to book in for this baby.
