Masterchef: The Professionals champ Steven Edwards, who runs the fine-dining Etch in Hove, is heading to London to take over the restaurant at Richmond’s Bingham Riverhouse hotel. In contrast to his place down south, Bingham Riverhouse will offer an a la carte rather than a tasting menu, featuring the best local and British produce.
That means dishes like crab mayonnaise with crab jelly & caviar; lamb saddle with broccoli puree & shepherd’s pie; butter roast brill with Jerusalem artichoke & preserved lemon; and creme fraiche panna cotta with honey cake & mandarin sorbet. Sounds like a little staycation in Richmond is on the cards…
