SILVERLEAF AT PAN PACIFIC LONDON IS CELEBRATING ART, SCIENCE & DESIGN WITH ITS NEW COCKTAIL MENU

It’s the first new menu since the bar opened back in February of last year

It’s all change at Silverleaf this autumn as the cocktail bar has launched a new menu that blends art, science and design with cocktails. The same minimalist, elegant style that the bar has become known for remains with the new Under the Lens menu, which is split into four sections – Highballs, Ferments, Cocktails and Silverleaf Signatures – and champions two core ingredients per drink, alongside creative garnishes made from in-house paints, leathers, oils and gels.

For the Highballs, the bar team has created flavourful waters, made by breaking down fruit and plants, to lengthen spirits for serves like the Mango | Kampot (with Plantation 3* rum, mango, kampot pepper & saffron) and the Lychee | Jasmine (with Ketel One vodka, lychee, jasmine & butterfly sorrel). Various fruits and vegetables have been preserved or fermented for the drinks in the Ferments section, including the Raspberry | Vetiver (with Toki whisky, raspberry, ruby cacao & vetiver) and the Celery | Poblano (with Patron Blanco tequila, celery, poblano & fennel).

Fans of classic serves should look to the Cocktails section, which features heavier spirits and spices in innovative interpretations of old favourites, such as the Yuzu | Petitgrain (with Bombay Sapphire gin, Cocchi Americano, yuzu & petitgrain) and the Corn | Cacao (with Oxley gin, roasted corn, cocoa butter & vanilla). If you’re a Silverleaf regular, you’ll be pleased to hear that some of the bar’s beloved creations, like the Pineapple | Miso (with Craigellachie 13, pineapple caramel, miso & brown butter) and the Verbena | Olive Oil (with Roku gin, mastiha, olive oil & lemon verbena), have made it onto the new menu under Silverleaf Signatures.

To complement the bar team’s creative cocktails, Silverleaf has collaborated with microscopic photographer Karl Gaff on the menu’s design. He’s brought the DNA of each serve to life through micro lens zoom imagery of the core ingredients, which are presented in kaleidoscopic-style patterns across the menu. Open until 2am and just moments from Liverpool Street, Silverleaf is the perfect place for cocktails in the City.
