SILO IS MOVING FROM BRIGHTON TO LONDON

Silo, the acclaimed zero-waste restaurant run by Doug McMaster (who also opened Cub with Mr Lyan), is moving from Brighton to London, taking up residence in the White Building in Hackney Wick. The relocation is part of CRATE Brewery’s refurbishment of the space, which also includes a new experimental brewery, a bigger bar, more outdoor amphitheatre-style seating and a workspace.

Silo will take the space upstairs, serving sustainability-focused dinner and brunch menus. In the evening, the regularly changing menu will feature dishes like grilled fantail squid with white kimchi and Douglas fir; Jerusalem artichokes with Cashel Blue and ruby kraut; blue potatoes, barbecued sea kale and caramelised whey; and golden linseed ice-cream with fig leaf oil, whilst weekend brunch is set to include Silo porridge with seasonal fruit and coddled eggs with black pudding and kimchi. Mr Lyan will be helping out on the cocktail front and as is the Silo way, wines will be sourced from small and artisanal producers.
