Go on a journey around the four coastlines of Turkey with Selin Kiazim as she takes over The Sea, The Sea’s chef’s table for a two-day pop-up this June. This marks ten years since Selin held her very first pop-up at Trip Kitchen, which used to be just three doors down from The Sea, The Sea in Haggerston. Since then she’s launched three restaurants (including the much-missed Oklava), published two cookbooks and won the dessert course on Great British Menu.
For the pop-up she’ll be cooking up a seven-course menu making use of The Sea, The Sea’s responsibly-sourced seafood, including seafood meze with bone marrow poğaça; crab börek with einkorn pastry, soft leeks & a sour Antep shellfish sauce; and dry-aged John Dory with Turkish morel pilav, egg yolk, peppercorn & herring roe yoghurt sauce.
