Matt Whiley, the man behind the Peg + Patriot and the infamous wheelie bin cocktail, is launching a new cocktail bar in Hoxton this April. Scout will be all about British ingredients, using only the freshest, seasonal produce, as well as foraged goods, in an effort to reduce waste and stay sustainable. The short drinks list will feature seasonal cocktails and house ferments as well as a small selection of beers and natural wine. A snacks menu, with dishes like fried vegetable skins with house seasoning, will make use of any leftover cocktail ingredients. Scout’s basement space will be taken up by the Laboratory, a ten-seater private area with its own exclusive, daily changing menu, where you can get a front row seat to the cocktail development process and maybe even mix something up yourself.
