SALLY ABE TO OPEN THE PEM

She’s already opened The Blue Boar pub inside the Conrad London St James and now Sally Abé is onto her next venture for the hotel. The Pem is named after the pet name for suffragette Emily Wilding Davison and Sally’s taking that inspo right through the team with women in the senior roles – Laetizia Keating (ex-Harwood Arms) as Head Chef and Emma Underwood (ex-Darby’s) as General Manager.

The menu at The Pem will reflect the style of cooking Sally has become known for – classic combos with a refined new spin – and will include dishes like poached native lobster with shellfish cream, heritage tomatoes & sweet olive; roasted John Dory with brassicas, lemon & sauce Choron; and black forest gateau with chocolate curls & English cherry ripple ice cream. All of that will be complemented by a wine list full of independent producers, curated by sommelier Emily Harman of wine consultancy VinaLupa. Not only does the food sound great, but we are digging The Pem’s pink art deco interior too.
