The Macellaio RC founder is opening Fish Game in Canary Wharf this spring
He’s founded a mini meaty empire with Macellaio RC but now Roberto Costa is moving away from Italian beef and focusing on ultra-seasonal, sustainable British produce and the best fish and game from the UK. Similar to the approach at Macellaio RC, the ingredients at Fish Game will be treated simply, cooked over fire by the kitchen team, led by Executive Head Chef Lello Favuzzi (previously at Mortimer House and L’Anima).
The restaurant, which’ll be filled with vintage and reused furniture and reference the elements of earth, fire, water and sky through touches like a charcoal grill and octopus wood carvings, will also feature a tequila bar serving daily aperitivo and a wine list with bottles spanning both old and new world.
