peter sanchez-iglesias to open
rooftop restaurant at the standard
It’s already been announced that Adam Rawson will be in charge of the main restaurant at The Standard hotel in London, but now we have news of the rooftop restaurant too, with Michelin-starred chef Peter Sanchez-Iglesias taking charge. This will be Peter’s first restaurant in London following his very successul Casamia and Paco Tapas in Bristol. Perhaps sensibly the rooftop offering at The Standard will be closer in style to Paco, which is more relaxed than the refined tasting menu format of Casamia. We’ve been to Paco and can confirm that it’s pretty banging so this is good news for London.
There’s not many details on the menu yet but it will be a mix of Spanish and Mexican according to Peter, with things like ceviche and tacos, as well as meats cooked over fire. The Standard, London is due to open with 266 rooms next year, opposite Kings Cross St Pancras station. It’ll be the groups first hotel outside of North America, adding to the ones in Los Angeles, Florida, and New York.
