restaurant using pure sea water as one of its main ingredients? We might just have heard it all with this one. New Neapolitan restaurant ‘O ver, opening near Borough Market in June, will be the first restaurant in the country to use pure sea water across most of the menu. That means it’s going in the cicchetti, the pizzas, the pastas, the breads, the salads and yes, even the desserts. Taken directly from the Med, and naturally micro-filtered, the pure sea water is full of lovely minerals, so as well as adding another level of authenticity to the food, it’s actually better for your health. If that means we can tuck into more pizza because it’s good for you then we are down.
