NOODLE STEPPING & CUTTING AT KOYA

Bloomberg Arcade, the pedestrianised avenue that runs through Bloomberg’s European HQ, has become a hotspot for food and culture in the Square Mile, thanks to an exciting programme of public art installations, concerts, screenings, markets and its collection of independent restaurants. Bloomberg Arcade is home to a host of global cuisines ranging from US-inspired burgers, Japanese noodles and Indian BBQ, to name but a few. Now thanks to a series of spring masterclasses, you can roll up your sleeves, don your chef’s hats and explore some of the restaurants like never before.

Koya serves up some of the best noodles in the city and now you can learn some of the secrets behind their legendary udon with this noodle stepping and cutting masterclass. After an introductory talk all about udon, you’ll have a go at stepping and cutting your own noodle dough….yes you actually step on the dough to knead it. This is how it’s done in the Sanuki region of Shikoku, Japan as the stepping process allows the dough to be kneaded in all directions to produce ‘koshi’, a bouncy, chewy texture of noodle with the right amount of bite.

That noodle making is hungry work, so you’ll follow the session with a lunch of either hot udon in dashi broth or cold udon with dipping sauce, served alongside homemade pickles, braised pork belly and miso chicory salad.

Tickets are priced at £30 per person, including the masterclass, tea/coffee on arrival and a sit-down lunch.
