NOMA PROJECTS IS COMING TO LONDON FOR ONE DAY ONLY

Noma Projects, the Copenhagen restaurant’s spin-off brand aimed at home cooks, is taking over KOL for an afternoon

Noma is closing its doors in 2024 to move away from being a restaurant and turn into a giant lab dedicated to food innovation – and part of that shift has already begun with Noma Projects. Launched in 2022, this arm of Noma is a way for the team to share all the developments they make and that includes products. Now Noma Projects is coming to London for one day only, teaming up with Santiago Lastra’s KOL (he has a strong relationship with Noma, having worked with them during the restaurant’s residency in Tulum) for a collab menu that showcases all the Noma Projects products.

The likes of Smoked Mushroom Garum, Dashi RDX, Vegan XO Sauce, Roasted Kelp Salt, Wild Rose Vinegar and Forager’s Vinaigrette, plus the unreleased Corn Yuzu Hot Sauce, will be incorporated into a range of dishes on the day, such as Vegan XO Sauce with octopus, tender cabbage & fermented gooseberries and Roasted Kelp Salt & Blanco Jaguar Chocolate sorbet.

It’s a standing event, running across three time slots, where the dishes will be available for you to pick up from the open kitchen. Tickets are £95 and include five small dishes, two drinks and two Noma Projects products to take home, and they’ll be released via the KOL and Noma Projects newsletters on 20th August, so make sure you’re signed up if you wanna be there.
