Balkan baker Spasia Dinkovski is celebrating two years of her pop-up and delivery brand Mystic Börek at The Plimsoll in Finsbury Park. Together with the team behind the host pub, Four Legs, Spasia will be throwing a (now fully booked) lunch and an afterparty from 5 til 11pm where they’ll serve up the collab’s love child, Hambureks – yes that is a burger in a börek. Inspired by her Macedonian grandmother’s recipe book, Spasia built Mystic Börek over lockdown with her signature börek (layered cheese and egg phyllo pies) recipe at its centre. Two years later, Mystic Börek now delivers her pies throughout the city and has teamed up with the likes of Supa Ya Ramen, Ling Lings, E5 Bakehouse and more.
