MEXICAN-KOREAN FUSION RESTAURANT MEXICAN SEOUL TO OPEN IN VICTORIA PARK

Ashley Chipchase is taking Mexican Seoul from the street food scene to a permanent taco bar this summer

After founding Mexican Seoul when he was furloughed in 2020, Ashley Chipchase has gone on to trade at a range of London markets and festivals across the UK and won an array of awards at Wing Fest. Now he’s taking his Mexican-Korean fusion concept to the next level by opening a taco bar at East London Liquor Company at Bow Wharf, right on the corner of Victoria Park.

The 60-cover spot will be serving up dishes including:

  • elote-style corn ribs with pecorino cheese, miso & doenjang mayo
  • tuna tostadas with guacamole, oi muchim & fried leeks
  • spicy pork belly tacos topped with Korean slaw, lime crema, fried onions & homemade salsa verde
  • Honey Buffanero and Gochu-Gang chicken wings

Given that the restaurant is right next to East London Liquor Company, the distillery will be helping out with the drinks list, which’ll feature Kimchi Bloody Marys, Sesame Old Fashioneds and Soju Martinis, with collabs from local breweries like Pillars and Pretty Decent Beer Co. Cocktails, tacos, terrace seating and DJs on the weekend? Sounds like Mexican Seoul is gonna be a popular spot this summer.
