Santo Remedio is bringing the Mesa Santa dinner series back after a successful launch last September with guest chef Roberto Solis. This time, they’re teaming up with Diego Hernandez, a Tijuanan chef whose restaurant Corazón de Tierra in Ensenada, Baja California, was named one of Latin America’s 50 best in 2021. Diego will be working with Santo Remedio founder Edson Diaz-Fuentes to cook up a Mexican Sunday roast, which will include charcoal grilled oysters with butter & salvia, oysters aguachile rojo with pickled red onion & fennel, red & black adobo whole roasted suckling pig served with salsas, frijoles puercos & handmade flour tortillas – all served family-style.

The following Monday and Tuesday, Diego will serve up an exclusive five-course tasting menu complete with drinks pairings. Dishes will include the likes of black seabass ceviche, a swiss chard tamal with quail, and turbot with green rice & seasonal mushrooms. The full menu plus drinks will be priced at £95 per person.
