The original Taka in Shepherd’s Market is getting a makeover and opening as omakase restaurant Maru this summer. Maru will serve a 20-course farm-to-table tasting menu to just ten diners sat around a counter, so it’ll be a real intimate experience. The menu will change daily according to what ingredients are available but it will feature a blend of British produce and Japanese flavours, so you could be eating the likes of Sussex Namayasai farm garden salad and Brixham squid nigiri with Exmoor caviar.
Maru will also be the first Japanese restaurant in the UK to specialise in dry ageing fish (it gives the fish a soft, buttery texture) so you’ll be able to see tuna, trout, brill, squid and more ageing in custom-made display fridges in the restaurant – and then you’ll be able to eat it as it’ll feature heavily on the menu. We’re big fans of Taka (both this old one and the new restaurant in Marylebone) so we’ve got high hopes for Maru.
