Owner of East Finchley’s Margot Bakery Michelle Eshkeri is soft launching a second, larger bakery in Islington. Holloway Model Bakery landed in N7 at the end of August, bringing the exceptional bakes that have made Margot so beloved to a new north London neighbourhood. Similarly to the OG, which revived a dilapidated shop, Holloway Model Bakery has made its home in an old metalworks that has undergone quite the transformation – you can see the before and after on Insta.
From what we can gather so far, the likes of sourdough loaves, babka, cinnamon buns, Victoria plum slices, brioche iced buns, almond bear claws, apple custard danishes, croissants, pain au chocolats and apple bread and butter pudding are all gracing the counters currently. And since they’re coming from the brains behind Margot, we can expect them to be something special.
Holloway Model Bakery is still in soft launch mode for now, but you can stop by from Wednesday to Saturday, between 8am and 4pm, to get your hands on the fresh bakes.
