MANN’S GOT MUNCH | MOCHA MOUSSE

It’s London Coffee Festival this September so Mann’s Got Munch has come through with a coffee dessert that’s almost as easy to whip up as making a brew, and it’ll hit the spot for chocolate fiends as well. And if you get the ingredients from Weezy, the UK’s first on-demand supermarket that delivers groceries to your door in 15 minutes, you don’t have to plan in advance or make sure you’ve got the right bits in, you can just knock it up as soon as the sweet cravings strike. As Sophie says, “This is a simple yet boujie dessert that will please any caffeine loving crowd, thanks to a recipe inspired by the kween Nigella. It takes less that 20 minutes to rustle up and you can get the ingredients to your door in 10 with Weezy; its a no brainer.”

Ingredients

200g Mallow & Marsh vanilla marshmallows coated in milk chocolate
40g slightly salted butter
150g Tony’s Chocolonley 70% dark chocolate
2tbsp Clipper Fairtrade Instant Coffee mixed with 50ml hot water
1tsp Dr. Oetker vanilla extract
300ml double cream
Cocoa powder and coffee beans for optional garnish

Method

1. Chop butter and chocolate into chunks.

2. Add the chopped chocolate, butter, chocolate coated vanilla marshmallows, instant coffee and 50ml hot water to a saucepan. On a medium heat allow the marshmallow to melt completely into the chocolate, stirring occasionally until combined (this takes around 10 minutes). Remove from the heat and allow to cool completely.

3. Whip up the double cream with vanilla extract to form stiff peaks. Slowly whisk in the cooled coffee mixture until smooth.

4. Transfer to ramekins and chill in the fridge for a minimum of 2 hours. Dust with cocoa powder and dress with coffee beans before serving.
