With London Coffee Festival just gone and UK Coffee Week coming towards the end of the month, now’s the perfect time to shake up a coffee cocktail. And they don’t come more classic than an Irish Coffee. This is the way that Aaron and Ciaran make it at Homeboy, using coffee bitters and dark muscovado syrup to intensify the rich notes of the drink.

What You Need

35ml Dead Rabbit Irish Whiskey
50ml coffee
10ml dark muscovado syrup
20ml cream
5ml coffee bitters

What You Do

Pour the hot coffee into a warm glass about 3/4 of the way full. Add in the dark muscovado syrup and coffee bitters and stir.

Add in the whiskey and finish with the cream, floating it on top by pouring over the back of a spoon.
