Emilia’s Crafted Pasta built its name on the idea that pasta shape and sauce are never paired by accident, and now INSIDERS can learn the theory behind it firsthand. On Monday 27th July, the team at Emilia’s Canary Wharf is running a 90-minute egg pasta masterclass covering everything from choosing your flour to shaping your own dinner.

You’ll learn what separates good egg pasta from average (starting with why semolina and 00 flour behave so differently), then roll your dough by machine and shape it into tagliatelle and farfalle by hand, along with the story behind both. There’s a lesson in pairing shape to sauce properly, plus a demo on turning your offcuts into a second batch instead of the bin.

It’s the same thinking behind Emilia’s four-hour slow-cooked béchamel bolognese, one of the better plates of pasta in London and proof the brand takes this science seriously. Suitable for all skill levels and capped at 10 people, all ingredients and equipment are provided, and you’ll take your pasta home in a takeaway container to cook however you like.

Tickets cost £40 per person and include Italian nibbles and a drink (alcoholic or not) throughout.
