Head Chef at B Corp-certified hotel Bingham Riverhouse, Vanessa Marx is passionate about sustainability. She uses produce from local and regenerative suppliers, celebrates seasonal and wild ingredients, and trains her team to work with a zero-waste mindset to help the Riverhouse Restaurant minimise its impact on the environment whilst still delivering an exceptional experience for its guests. She’s also hosts events like The Last Supper, featuring ingredients that could be made extinct or rare by 2050 unless we make changes to our food systems, to help inspire and educate the public about sustainable eating.
