East London Mushroom Collective very much does what it says on the tin – growing mushrooms in east London, and establishing a local food network in the process. The urban farming organisation, made up of team members who also have experience in food surplus rescuing, mushroom farming, and zero emissions transportation, uses byproducts and waste from local businesses to grow gourmet mushrooms in New Spitalfields Market. The closed loop system means the mushrooms are produced without waste, and growing them right here in the city, close to the various restaurants that ELMC supply, mean they come with low food miles too.
