Sarap Filipino BBQ & Lechon, run by Ferdinand Montoya (previously of Restaurant Story and Foley’s) is the latest resident at The Sun & 13 Cantons, and as the name suggests, it’s all about Filipino food with the menu drawing inspiration from the 7,000 islands that make up the Philippines. There’s a focus on cooking over charcoal, with dishes including slow braised short rib, grilled market fish with escabeche sauce, jackfruit and potato adobo, kinilaw with cassava crisps and their namesake lechon; pork belly coming rolled and roasted and stuffed in a bun.
