Parasol

Andy Kerr (the founder of The Sun Tavern, Discount Suit Company and The Umbrella Workshop) and Tom Gibson (founder of Ruby’s and operator of The Bluecoats) teamed up to open cocktail bar Parasol in Dalston. Formerly The Nest, the subterranean space is now a bar serving riffs on classic cocktails with a side of 80s NYC disco. Expect serves like the Yuk Fu (El Gobernador Pisco, Green Chartreuse, lemongrass, pandan, coconut, chilli, and lime), The Space Coyote (Dewars 12yr Scotch Whisky, Cap Corse Blanc, lacto mango, and pimento) and the Korean Jesus (Ocho Blanco Tequila, Quiquiriquí Mezcal, plum soju, gochujang, sesame, coriander, ginger, and honey).
