Chef Eric Wan (of Dinner by Heston) runs modern Vietnamese pop-up Lá Lốt, inspired by his Chinese/Vietnamese background and his mother’s birthplace of Chợ Lớn in Saigon, where he puts a twist on traditional ingredients and street food dishes. He’s taking over High Ground in Angel for two nights this March, with four-course menu including dishes like chicken, sweet basil & peanut salad; beef, star anise & lemongrass with jasmine rice; and Vietnamese coffee tiramisu.
