big fans of hot pot spot Shuang Shuang, so when we heard about the special Lobster Hot Pot, we just had to get down there and get cooking again. Designed for two to share, the dish combines a WHOLE lobster, neatly portioned and served on ice, and big bowl of their zingy and spicy Thai-style Tom Yum broth.

Lobster isn’t an easy eat at the best of times and with a simmering broth added in to the mix, trying to get the meat out of the shell does get a little messy. It’s totally worth it though; the lobster is sweet and succulent, and it really deepens the flavour of the broth, so all the other ingredients you drop in from the conveyer belt become even tastier. Shuang Shuang is all about getting hands on anyway, so just get your claws into that lobster and go for it.
