Roll up your sleeves and get baking
Toklas Bakery, opened by Frieze founders Matthew Slotover and Amanda Sharp in 2021, has become one of the city’s most beloved bakeries. The bakers use heritage grains and home-milled flour to make a range of breads, pastries and viennoiseries, like tahini cookies, fruit danishes, porridge sourdough and cardamom buns, and Londoners can’t get enough.
Now you can go behind the counter and have a go at making one of Toklas Bakery’s signature bakes at this exclusive cardamom bun-making masterclass for our INSIDERS. On Fri 13th June, Head Baker Ellie Chisholm will take you through the ingredients used in the buns and the process of laminating the dough, before you roll up your sleeves to make the cardamom sugar, cut up the dough and shape the buns.
Whilst the buns prove and bake, Ellie will talk you through some of Toklas Bakery’s different breads, which you’ll be able to taste alongside some paired cheeses from Neal’s Yard. Once your buns come out of the oven, you’ll dip them in vanilla syrup and then they’re ready to take home – though we reckon they won’t be sticking around for too long.
Tickets to the cardamom bun-making masterclass cost £50 for INSIDERS, and include the session, a bread and cheese tasting, and four buns to take home. You can book tickets below and if you’re not a member yet, you can sign up below for just £2 a month.
