everyone else is detoxing we’re retoxing, because life’s too short. So we thought this week’s Londoner should go to Daniele Ziaco, Head Barman at Ping Pong, the makers of Dim Sum…

Tell us Daniele where do you live in London and why?

I live in Bethnal Green and I’ve been living in East London for the past 10 years. I love seeing how East London, especially the Shoreditch and Hackney area, have changed over the years. The vibe is fantastic, so many speakeasy bars and new restaurants around that makes the area so unique.

Oh we agree with you there! What is it that you do?

I’m Bar Manager of Ping Pong group, the alcoholic man in the company…the only one allowed to drink alcohol on duty, not bad huh?

You obviously know your cocktails then! Can you give our readers an easy recipe to knock up at home?

I love my Italian liqueurs, see below a twist on a classic, easy to duplicate at home:

Name: Wasabi & Amaretto Sour
Garnish: 1 Lemon wedge
Glass: Short glass
Method: Shake – and enjoy

1) 2cm of Wasabi paste
2) 50ml Amaretto di Saronno
3) 20ml fresh Lemon juice
4) Ice (until the top)
5) Shake (Approx. 5 – 6 sec)
6) Pour everything into the glass
7) Add Straw

We’re liking the sound of that! What are your favourite cocktail bars in London?

“Night Jar” in Old Street for their unique and extravagance cocktails, “Hakkasan bar” for their ‘look’ and B@1 for their customer interaction, not an easy task for a bar chain.

Daniele - Rock'n'roll-1

Three cracking choices and Blind Date proved you don’t need more than 3! Finally, tell us what would be your perfect day in London would be…

Sleep, rest, sleep, rest…and sleep and rest! I’m a father of two, my weekdays are split between work and family. The weekends are usually more intense than the weekdays as they (my wife and kids) are usually keeping me busy on: meeting friends, sport activities for the kids every Saturday, indoor play, outdoor play, playgrounds, sightseeing, lunch and dinner for the whole family (mother-in law included), food shopping, clothes shopping, GHRR…and more! Well, I’m loving it but a good rest wouldn’t hurt me.

There you go peeps, by now you should be sipping that Wasabi & Amaretto Sour…Or you could always just head to your nearest Ping Pong and check out Daniele’s creations.
