A Restaurant and Bar Dedicated to Georgian Dumplings is Opening in Fitzrovia

Kink(all)y will launch on Charlotte Street this December

Centred around traditional Georgian dumplings, khinkali, Kink(all)y is a new small plates concept that’s headed for Fitzrovia this winter. First time restaurateur Diana Militski will be joined by two other members of the Moscow hospitality scene to bring the restaurant together: chef David Chelidze, of Hedonist, and bartender Andrew Pruts, part of the team behind Insider.

Though heavily inspired by that of Georgia, Kink(all)y will take cues from a range of other cuisines and their menu will feature “some really boundary-pushing flavours from chef David that take inspiration from across Eurasia,” as Militski puts it. The restaurant’s photo shoot demonstrates that it won’t be going down the traditional route, with images of the dumplings being picked up with chopsticks though Georgian etiquette calls for them to be eaten with your hands.

The khinkali will come with a range of fillings and accompaniments, such as wagyu beef, jonjoli and umeshu sauce; langoustine, tarragon and matsoni; and pheasant in a wild mushroom broth. Other dishes on the menu will include:

  • Aubergine with satsebeli and vanilla sauce
  • Beef tartare with taleggio and kakheti oil
  • Sundried beets with ricotta and tkemali sauce
  • Homemade cream cheese topped with persimmon, pecan and salted caramel

Downstairs, a subterranean sister bar called Kinky will be led by Pruts, who’ll serve up signature twists on classic cocktails. Expect an Old Fashioned with honey, chocolate and ceps; a Gimlet with gin, sesame, cucumber and tonka; and a Margarita with tequila cacao, beurre noisette, hazelnut and citrus.

Kink(all)y is taking over a Charlotte Street spot formally owned by burger joint Flower Burgers, and since the restaurant is a collaboration with architecture firm Da Bureau, it should be getting a pretty major renovation.
