kinilaw & buko to open

Filipino chef Francis Puyat, who’s behind the food at 100 Hoxton along with founder Andrew Zilouf, is opening a Filipino restaurant Kinilaw & Buko right next door this month. The restaurant will champion two Filipino dishes; kinilaw (a version of ceviche made with palm vinegar and kalamansi rather than lime) and buko (an artisan ice cream served in a baby coconut shell), as well as serving a range of cocktails made with Filipino ingredients. The kinilaw section of the menu will include daikon fermented shrimp with green peppercorns and friend garlic, scallop with radish and fermented roe, and pork belly with cucumber and chilii, whilst the buko options include red bean ice cream with miso butterscotch sauce and ginger Anzac biscuit, lychee ice cream with sumac popping candy, and rum and pineapple ice cream with matcha honeycomb.

Mamasons may have recently opened in Chinatown but Filipino food is still under-represented in London and having experienced some seriously good Filipino food in LA, we’re excited to see what this place is like.
