Thai spot Kiln in Soho is welcoming the chefs of Thailand restaurants Samuay & Sons, 100 Mahaseth (where we visited during our three-week Thaitinerary) and Wana Yook for a two-night kitchen takeover. Kiln hosted Chef Num’s first UK collaboration dinner in 2019, and now he’s returning alongside Chef Chalee Kader (known as the ‘big brother’ of the Bangkok restaurant scene), who’ll be making his London debut. Together with Kiln’s head chef Meedu Saad, the team has created a menu of bold and creative dishes featuring flavours from the Isaan region and native Thai produce. Expect the likes of Tamworth pork jowl glazed with fermented fish; Mam Isaan style black pudding; Koi Pla tartare of wild sea trout; and Omm curry of crab with kanon jeem noodle with plenty of natural and biodynamic wines for pairing.
